In the frying pan
Fried potatoes cut into rounds or cubes, pommes parisiennes, and all the ingenious mixtures of potatoes and such vegetables as peas, paprika, maize, etc., only have to be sautéed in a little oil. Put the oil, and for more flavour, a tiny lump of butter in the frying pan. Add the frozen products and brown quickly. Fry on all sides until they are golden brown. Cooking time: about 8 minutes.
Rösti can only be prepared in the frying pan. This dish of Swiss origin, can be very quickly prepared if a very thin slice of frozen potatoes is used. If it were necessary, the rösti would be the best proof that differently cut shapes of a potato cooked according to the same method, have different flavours. With respect to taste, rösti is no more like the fried potatoes cut into cubes than the latter is like those cut into rounds or pommes parisiennes. Their taste is very different.

For 600 g. of rösti, heat 25 g. of butter in the frying pan. Spread the rösti evenly in the pan. Cook for 2 minutes, turn over and cook for another 2 minutes. Sprinkle with pepper and salt. Fried onions and aromatics such as paprika powder, can be mixed in. Shape into a round flat cake and fry on both sides until a golden brown and crisp crust is obtained.
